I cant believe the amazingness that so many bloggers are bringing to Mofo. Keep an eye out on VeganMofo Page for fun giveaways and highlights. I will probably do a round up of some my faves too every week.
For Gluten-free Crust options see here.
I madeRicki’s Almond fetawith parsley and thyme for this pizza. I used raw almonds and soaked them overnight. Peeled some of them and left some unpeeled (I am z lazy ;), hence the brown flakes in my cheese. With all the herbs and added sourness, it does taste fabulous. It is not exactly a feta though.
CrustyI used some of the feta on the pizza and used some to make stuffed savory french toasts. The toasts were an absolute hit at breakfast. Here is the recipe for the Samosa savory toasts. Press some feta between 2 slices instead of the potato filling, coat in the savory batter and pan fry them. nom nom
Pizza Steps:In a bowl, mix warm water, sugar and yeast and let sit until frothy(10 minutes)
Add the flours, salt, herbs and evoo.
Mix and knead for a minute, spray water on top and cover with a damp towel.
Let rise for 1.5 hours. Listen to some music, walk the dog. Clean the kitchen, setup props, yell at the buyers who are giving an inflated price for the house you like, think of more pizzas to make..
Use some spelt flour and oiled hands to gather the dough and knead for 3-4 minutes.
Roll this dough out to as thin as possible on parchment.
Brush evoo on top.Arrange the baby greens, golden cherry tomatoes, olives and mushrooms.Sprinkle feta liberally.
Sprinkle the spices and bake in preheated 410 degrees F for 12-13 minutes.
Broil on Lo for half a minute.
Take out, top with fresh baby greens/chopped basil, cut and serve.
Eat me.
Ricki’s Almond fetarecipevariation:I added parsley and thyme for this pizza. I used raw almonds instead of blanched and soaked them overnight. Peeled some of them and left some unpeeled, hence the brown flakes in my cheese. The rest of the recipe is the same.

I have just made this and it was delicious!! This is the first vegan pizza I really loved. So I guess I have to make some more of your pizzas 😉
The feta was perfect. Didn’t think much of it when I started but I was astonished how much it tastes like feta. 😀Reply

Oh man! I have been drooling over pics of this pizza on instagram and facebook and my inbox for the last few days now, but I finally have time to stop by. Everything about this pizza is so beautiful- the mediterranean flavors, the almond feta… It’s like a dream come true. The only thing better would be you making it for me!

I looooove almond feta, I’d eat that entire pizza in a heartbeat.

The discovery of good store-bought tofu feta has made me quite lazy. I’m really digging the look of the almond version though! Any extra effort for results that are so delicious would be completely worthwhile… And probably even less expensive, too.
Reply
Richa
for sure less expensive. i like some of the options, but they are always out of stock in stores here. seattle is getting very vegan oriented lately 🙂 so as well try some at home:)

I love how there are herbs in the crust, herbs in the feta, and the whole pizza gets topped with more herbs. Lots of flavor everywhere!

I love the way you load toppings on your pizza- that’s what I do, too. The more toppings the better! I hate when restaurants scatter a few mushrooms and a couple of pieces of broccoli on my pizza. I want TOPPINGS!

Richa
😀 i do too! if my crust can hold it, load it!

Another fantastic recipe. I LOVE this blog…I only just recently discovered it and can’t wait to use these recipes in the near future. I am clearing out my rss feed reader so that I can fit more good quality vegan food blogs in and yours is right up there 🙂 Cheers for all of your hard work and thank you from the bottom of my little vegan heart for making these fantastic recipes. We don’t have a lot of vegan produce here in tiny Tasmania at the ends of the earth and so I have to make my own and I love it when I can find recipes from scratch 🙂
