Pawley's Island Pimento Cheese

This version of pimento cheese, which was created by cooks from Pawley’s Island, South Carolina, is now a commercial product. It’s called “Palmetto Cheese”. You can buy it here:

It doesn’t appear that the actual recipe is available, but I found the below copycat recipe.

Palmetto Cheese copycat (Pimento Cheese)Ingredients Servings: 100Yield: 3 1/2 cups6 ounces cream cheese1/2 cup Vermont extra sharp white cheddar cheese, grated3/4 cup sharp cheddar cheese, grated1 cup Monterey jack cheese, grated1/2 cup mayonnaise1 teaspoon red wine vinegar4 ounces pimientos, chopped1/2 teaspoon onion powder1/2 teaspoon garlic powder1/2 teaspoon paprika1 dash hot sauce (or more!)fresh ground black pepper, to tasteDirectionsUsing a hand held mixer, beat cream cheese until soft.Add the remaining ingredients and beat until creamy and combined.Cover and refrigerate for about an hour.

Darryl's Wood Fired Grill Adam's Rib

As I mentioned previously, in early November a computer disaster caused me to lose over twenty requests and my replies to them. Some of them will have to go by the wayside, but I am trying to recall and post some of them.

This particular request was for "Adam's Rib". Not the restaurant in Chicago, but an offering at Darryl's Wood Fired Grill in North Carolina.

Darryl's was founded in the early 1970s. It became very popular, and grew to 36 restaurants in nine states. As time passed, it changed hands several times, ending up as part of the Houlihan’s Restaurant Group. Houlihan's Restaurant Group fared poorly around the turn of the century, and in 2002 they went bankrupt, suddenly closing 25 Darryl's at once. Over the next few years, more Darryl's were closed until only one remained, in Greensboro, North Carolina. By 2008, even that one was threatened with closure, but the Kotis Company bought it, renovated it, and that last Darryl's Wood Fired Grill reopened in 2010. The new owners were stringent about locating and using the original Darryl's recipes, and the restaurant is currently flourishing.

So, what about "Adam's Rib"?

Barbecued beef ribs are a specialty at Darryl's, and it turns out that "Adam's rib" is not a recipe, but is a serving size of their beef ribs. From the menu: "Our famous fatty, savory, tender, slow cooked beef ribs smothered in Darryl's original BBQ Sauce. Eve's Rib (4 Ribs) Adam's Rib (6 Ribs)."

So, whatever the serving size, what is the recipe for Darryl's Wood Fired Grill's beef ribs? Well, therein lies a puzzle. You see, when I researched this back at the end of November, I found a video showing how Darry's ribs are prepared. However, that video appears to have vanished. I have searched diligently, but I cannot locate it now. There was also a video of how Darryl's prepares their baby back ribs (pork ribs). This video has vanished as well. Both of these videos featured the chef from Darryl's, so I think they were authentic.

What I recall of the beef ribs preparation video was that the ribs were marinated for quite some time, maybe overnight, in ale. Yes, ale. I cannot recall a particular brand or type of ale. They are then slow cooked on the grill and basted with Darryl's barbecue sauce, which you can buy at the restaurant or from their website.

I don't recall much about the baby back ribs video. I can't recall if there was a rub.

You can buy Darryl's sauce at the restaurant, and if you contact them via the contact information on their website, they might ship it as well.
