BLUEBERRY BANANA Steel Cut Oats in the Instant Pot (2024)

Steel cut oats are a healthy, delicious, and super filling breakfast option. The Instant Pot, or whatever pressure cooker you have, makes these yummy blueberry banana steel cut oats cook up quickly! They are also wonderful when made on the stovetop, they just take much longer and you have to babysit them. We love the combination of blueberries and bananas in this recipe. The only sweetener used is the banana, and the blueberries brighten them up. The oats are toasted which enhances their nuttiness. This is a recipe you’ll be making again and again.

Here’s what you need to make Blueberry Banana Steel-Cut Oats:

  • 1 Tbsp. coconut oil
  • 1 1/2 cups water
  • 1 1/2 cups coconut milk
  • 1 cup steel cut oats
  • 6 oz. fresh or frozen blueberries
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1 ripe banana, mashed

We used fresh blueberries for this recipe, but I’m sure that frozen would work great as well. I always have steel cut oats on hand now and love changing them up. This combination of blueberries and bananas is a favorite!

DOUBLE UP

This is a great recipe to double or even triple! The oats reheat well and are great to have in the fridge to eat throughout the week. Our Apple Cinnamon Steel Cut Oats are another recipe we love to double and eat all week. Double the ingredients but the cook time remains the same.

TOASTY

To begin making our Blueberry Banana Steel Cut Oats, press the sauté button on your Instant Pot. Once it reads HOT you can add the coconut oil and allow it to melt. After it is melted toss in the oats and cook while stirring occasionally for about 2 minutes until lightly toasted and fragrant. This step isn’t crucial to this recipe, but it really enhances the toastiness of the oats. When you’re done with the toasting step, press the cancel button.

SO MUCH GOODNESS

Once the oats are nice and toasty you can add the water, coconut milk, and blueberries. If you don’t have coconut milk you can use any type of milk you have on hand, almond milk would be great. You will also want to add the vanilla and salt at this point.

UNDER PRESSURE

Give it all a stir before topping with the mashed banana. DO NOT STIR in the banana. You want it to cook with everything else to get the sweetness, but you may get the burn notice if it is stirred in. Make sure your silicone ring is in place correctly and put on the lid. Cook on high pressure for 8 minutes and naturally release for 5 minutes. Natural release just means to let it sit for 5 minutes, then release any remaining pressure.

TIME TO EAT

The pin on the top of the lid will drop when the pressure has fully released. Go ahead and open up the lid. It doesn’t look very appetizing at first, but after you give it a stir and the blueberries pop it turns a beautiful purple color and gets creamy.

TOPPINGS

We topped our Blueberry Banana Steel Cut Oats with gorgeous, fresh blueberries and sliced almonds for a nice crunch. Aren’t they beautiful? The banana makes these oats fairly sweet but if you would like a little more sweetness, brown sugar is a yummy addition. I also think that shredded coconut, freshly sliced bananas, or any kind of berry would be amazing on these. Oh, and a sprinkle of cinnamon!

Ingredients

  • 1 tbsp coconut oil
  • 1 cup steel cut oats
  • 1 1/2 cups water
  • 1 1/2 cups coconut milk or milk of your choice
  • 6 oz blueberries fresh or frozen
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 ripe banana smashed

Instructions

  • Press saute on the pressure cooker and allow it to get hot.

  • Add the coconut oil and steel cut oats and cook while stirring for a couple of minutes until lightly browned and toasted.

  • Press the cancel button and add the water, milk, blueberries, vanilla, and salt and stir together.

  • Top with the mashed banana and DO NOT STIR.

  • Cook on high pressure for 8 minutes and naturally release for 5 minutes.

  • Release remaining pressure, open the lid, and stir together.

  • Serve warm with any toppings you like.

  • Keep refrigerated for up to 5 days.
